Tonight I am going out to a photography gig, and I had a lackluster lunch at work, so time was of the essence and I was craving beans. Yes, this happens a lot, actually. BEANS + AMBER = LUV 4 EVA.
Ahem. Anyway, that was awkward, wasn't it?
At any rate, this was tonight's quick-fix taco dinner:
I used a can of pinto beans (my last can of beans!) drained/rinsed & simmered with a couple of tablespoons of water, a couple of tablespoons of salsa (Casa Sanchez fresh roasted salsa is my store-bought local salsa of the moment), sea salt, red pepper flakes, cumin & chili powder; corn/flour hybrid tortillas (also a local company, Santa Rosa's La Tortilla Factory), and green onions, "fresh from my garden" (more on that in a moment).
OK, here is my green onion secret: a few weeks ago I bought some onions at Safeway. They were organic and came in a bag. I have left them out on my counter ever since. A couple of weeks ago, one began to sprout ... and I let it keep sprouting. Tonight I harvested the yummy green shoots growing out of it, and seriously, they were delicious:
I'm not really sure what to do with the onion now. I wish it would just keep growing forever, but I imagine that's not really reasonable nor likely. What should I do, internet? Give me advice!
Anyway, this dinner was so fantastic, I had three tacos in one sitting. Try it out! ☆

We're on the same wavelength--we had beans simmered with onions and green peppers and Mexican rice with cheese for dinner tonight. :)
ReplyDeleteI had the same thing happen to an onion of mine and my brother, ever the chemist, noted that once they sprout, the bulb loses its flavor, etc and the greens harvested are more flavorful....dunno if that's correct or not but it sounds right lol
ReplyDeleteHmmmm .... well, I mean, the bulb is getting soft now, if you know what I mean. ;) Scott says to put it in water. He usually knows everything because he is a Virgo so I may just take his advice point blank :P

ReplyDeleteThats amazing that you just let the sprout grow to get green onions of out that. Are you able to just put it in the ground? Will they produce more?
